Curry night

We had a real taste for a curry tonight, but we’re on a budget and I wanted to make it quicker than a visit to the local takeaway (using whatever is in the cupboards).

Here’s the Budget Bytes recipe for curry beef with peas & potatoes. I only had 1/2lb beef mince leftover and it still turned out ok.

I served it with rice, but sometimes I have some frozen naan dough to cook and serve with it instead. (I usually mix & rise this naan dough in a bread maker, because I’m terrible with making yeast doughs.) I think this curry could make an excellent pie filling, as an alternative.

Mr Mint has leftovers for lunch too.
